Men-gumi Miso Ramen
The miso ramen, curated by the renowned "Men-gumi," consistently ranks among the top in popularity in Miyagi. This dish is addictively flavorful, with a rich and deep miso broth. Garlic oil is used to sauté various spices and vegetables to bring out their aroma, and the carefully selected miso is combined with pork bone broth and a light niboshi (dried sardine) soup, creating a rich and profound taste. The dish is completed with thick, chewy noodles, making it a labor of love from the chef. You can enjoy the taste of this popular shop, known for its long lines even in the cold climate.
Maruwa Karoku Tsukemen
"Maruwa" in Aichi Prefecture was founded by Karoku Sakaguchi, who collaborated with Kazuo Yamagishi, the pioneer of tsukemen and founder of Higashi-Ikebukuro Taishoken, in the "Marucho" group in Ogikubo, Tokyo. "Karoku Tsukemen," which continues the tradition of tsukemen with a Maruwa-style twist, features a light soup with a perfect balance of sweetness, sourness, and spiciness that spreads in your mouth, with the bold flavor of fish flakes following closely. It’s highly praised as a taste you can enjoy every day without getting tired of it. The medium-thick noodles, made with luxurious Hokkaido wheat, perfectly complement the soup.
