Zenya Shio Ramen


When it comes to shio ramen, many ramen enthusiasts will instantly think of "Zenya," a legendary shop that revolutionized the perception of salt-based ramen in the ramen world. The beautifully clear, golden broth is made using Fukuen, a high-quality natural sea salt, and is packed with the umami of chicken, pork, seafood, and vegetables, along with a rich scallop dashi that elevates the flavor to supreme heights. Since its founding in 1999, Zenya has operated from a single location for 25 years. Due to its immense popularity, lines often form outside the shop, and it is not uncommon for the broth to sell out and the shop to close early. As a result, it is almost impossible for foreign tourists visiting Japan to experience this renowned ramen.

Yoshimuraya Tonkotsu Syoyu Ramen

The second featured ramen is from "Yoshimuraya," known as the birthplace and quintessential representative of the Iekei (house-style) ramen. Founded in 1974 in Yokohama, Kanagawa Prefecture, Yoshimuraya's tonkotsu shoyu ramen is especially beloved. This ramen's hallmark is its rich pork-bone broth combined with soy sauce, creating a deep and flavorful experience. Yoshimuraya’s tonkotsu shoyu broth is characterized by its strong umami, derived from slowly simmering pork bones, and its perfect balance of savory soy sauce. The broth pairs wonderfully with thick, slightly curly noodles that hold the broth well. A distinguishing feature of Iekei ramen is the use of chicken oil (chiyu), which adds an extra layer of richness to the soup. Ramen fans hold Yoshimuraya in high esteem as the original Iekei ramen shop, and countless derivative shops—both direct affiliates and inspired offshoots—have spread throughout Japan.

Toppings for Each Ramen

How to cocking

  • Zenya Shio Ramen
  1. Bring a large pot of water to a boil and cook the noodles for about 2-3 minutes (adjust according to your preferred firmness).
  2. Dilute the soup with about 270 ml of hot water.
  3. Drain the noodles in a colander, shake off the excess water, and place them into the soup.
  4. Top it with your favorite ingredients, and it's ready to go.

 

  • Yoshimuraya Tonkotsu Syoyu Ramen
  1. Bring a large pot of water to a boil and cook the noodles for about 3-4 minutes (adjust according to your preferred firmness).
  2. Dilute the soup with about 250 ml of hot water.
  3. Drain the noodles in a colander, shake off the excess water, and place them into the soup.
  4. Top it with your favorite ingredients, and it's ready to go.
Adjust the cooking time to enjoy the noodles at your preferred firmness.
