ICHIGEN Tonkotsu Ramen
"Ichigen" is a popular tonkotsu ramen shop in Saga City, particularly known for its rich broth and well-balanced flavors, which have earned a strong reputation locally. The distinctive broth draws out the umami of the pork bones, without being greasy or overly acidic. The appearance of the ramen, topped with a raw egg yolk, makes a striking impact, and the combination with Saga nori is considered exquisite. Unlike typical tonkotsu ramen, "Ichigen" uses medium-thick noodles, which pair perfectly with the rich broth.
NAKIRYU Tantanmen
The second is Tatanmen from "Sōsaku Men Kōbō Nakiryu" in Toshima, Tokyo. One of the few ramen shops to earn a Michelin star, Nakiryu is especially renowned for its Tantanmen, considered one of the best. This Tan Tan Mien features a creamy, rich yet light broth, with a perfect harmony of sesame paste, soy sauce, peanuts, and chili oil, creating a blend of sweetness, umami, and spice. The thin noodles are carefully prepared to complement the broth, and the minced meat adds an extra layer of flavor. The shop itself is small, with only 10 seats, and visitors can enjoy watching the chefs at work through the open kitchen. Famous for its long lines, Nakiryu still offers a bowl worth the wait.

How to cocking
- ICHIGEN Tonkotsu Ramen
- Bring a large pot of water to a boil and cook the noodles for about 2 minutes 30 sec (adjust according to your preferred firmness).
- Dilute the soup with about 300 ml of hot water.
- Drain the noodles in a colander, shake off the excess water, and place them into the soup.
- Top it with your favorite ingredients, and it's ready to go.
- NAKIRYU Tantanmen
- Bring a large pot of water to a boil and cook the noodles for about 2 minutes (adjust according to your preferred firmness).
- Dilute the soup with about 270 ml of hot water.
- Drain the noodles in a colander, shake off the excess water, and place them into the soup.
- Top it with your favorite ingredients, and it's ready to go.
